A commitment to craftsmanship has led Apollo Olive Oil from rigorously traditional techniques to the cutting edge of production technologies, with the taste and quality of the oil as the guiding values. Steven Dambeck's quest for extraordinary oil began with the planting of his first 600 olive trees in 1979. Throughout his travels in Europe in the years that followed he became familiar with traditional mills, visiting top producers and even apprenticing in a mill in Provence. By 1998, he was producing his own oil on an old mill recovered from Italy, and in 2000, master miller Gianni Stefanini joined the Apollo team. Thanks to Gianni's considerable expertise, they began to produce award-winning oils and eventually transitioned to the state of the art in European production technology - Dr. Marco Mugelli's system of milling under vacuum. One of only five in the world, their Cultivar 500 system places them in an elite group of olive oil producers who can offer the intensity of flavor and high levels of antioxidants that come with vacuum production. They have even earned the recognition of I Maestri Oleari of Milan, who in 2006 named Apollo one of the top ten olive oil producers in the world.
